Saint Lucia One Stop 
Lucian Recipes

Thyme and Lime Chicken


Ingredients:

8 Chicken Thighs
2 tbsp choppped spring oninon 
1 tsp dried or chopped fresh thyme
2 garlic cloves, crushed
juice of 1 lime/ lemon
6 tbsp melted butter
salt and freshlyt ground black pepper
cooked rice, to serve
lime slices and coriander sprigs, to garnish.


Put the chiken thighs in an oven proof dish or on a baking tray skin side down and using a sharp knife, make a slit, lengthways along the thing bone of each thigh. Mix the spring onion with a little salt and pepper and press the mixture into the slits.

Mix together the thyme, garlic, lime or lemon juice and all but 2 tbsp pf the butter in a small bowl and spoon a little over each chicken thigh
Spoon the remiaining butter over the top. Cover the chicken loosely with clear film and leave to marinate in a cool place for several hours or overnight in the fridge.

Preheat the oven to190 C / 375 F / Gas 5. Remove the clear film from the chicken and cover the dish with foil. Bake the chicken for 1 hour, then remove the foil and cook for a few more minutes to brown. Serve hot with rice and garnish with lime and coriander.
