GROUND PROVISIONS MEDLEY
Ingredients:
½ medium-sized dasheen
2 sweet potatoes
¼ small breadfruit
4 grains green fig
2 grains of plantain
1 tbsp salt
1 large onion
2 tbsps butter
2 tbsps oil
2 cloves of garlic
4 seasoning peppers, both red and green.
2 stalks celery
Chopped parsley to garnish
Peel the ground provisions and put in a big pan of water with salt. Cover and let boil for about 45 mins – 1 hour until it is cooked. Put the ground provisions to cool. Put the butter, oil and seasonings in a large saucepan and fry over a low heat, stirring constantly so that the butter does not scorch. When the ground provisions have cooled. Dice all of them in a large bowl. Pour the butter mixture over the ground provisions. Sprinkle the chopped parsley all over the completed dish. Serve warm.
Serves 4-6 persons
