MERRY CHRISTMAS TO ALL!!! :)  Baked Chicken. 

This Christmas is just around the corner and people are running here and there for that perfect gift. Not only so but this is also the time when most families come together to eat ham and turkey and black cake. Other families cannot have Christmas lunch without a whole chicken baked or roasted. If baked chicken is not your tradition, here is your chance to make it yours.

3-31/2 lb chicken1 tsp paprika                                 

1 tsp thyme

1/2 tsp dried oregano

1 tsp garlic crushed

1 tsp lime juice

melted butter for basting


Season the chicken with vinegar, salt, green seasoning and let it marinate for about 1 hour. Place the chicken in a baking dish and sprinkle with the paprika, thyme, oregano and garlic. Rub the mixture all over the chicken, lifting the skin and spreading the seasoning underneath it.

Preheat the oven to 190 degree c or 375 degrees f or gas mark 5. Strain the lime juice and pour over and under the skin of the chicken rubbing well. Spoom the melted butter all over the chicken, then transfer the chicken to the oven and bake for 1 1/2 hours to 2 hours.

For a Drink: SORREL

3 cups sorrel (red, with seeds removed)
1 part boiling water
2 cups sugar

Add sorrel to the rapidly boiling water. Bring to boil and simmer for 3 to 5 minutes or until the water is a nice dark red colour. Strain. Add sugar and stir until it is dissolved. Use this as a base or mixer with other drinks, or may be used alone. If a more spicy flavour is desired, add ginger and 3 or 4 cloves. Since sorel is in the markets around Christmas time, this makes a very nice drink for Christmas.
